Cupcakes and a GIVEAWAY!

I am super excited about today's post!

First, it involves something I love-- Cupcakes...

I am sure you have seen a pictures like this floating around on Pinterest. I decided to try them out, so quick and easy... and pretty moist and delicious too!

But I must be honest... it was the frosting that made the cupcakes...
 Even a little boy LOVED him some cupcakes...





Pumpkin Cupcakes with Browned Buttercream Icing
Cupcakes:
1 box of yellow cake mix
1 can of pure pumpkin (15 oz)

-Mix together and bake in cupcake liners at 350 degrees for 14 minutes or until inserted toothpick is clean.

(note: the batter will be thick, but it is ok, if you want you could probably add a little oil, but they don't really need it... also you could add in some pumpkin pie spice to add some flavor, I might try this next time)

Browned Buttercream icing:
10 Tbsp butter (I used nonsalted)
2 tsp vanilla
4 1/2 cups of confectioners sugar
2-3 Tbsp milk (I used skim)

-Melt the butter in a saucepan over medium heat stirring constantly until browned (about 5-7 min)
-Let butter cool almost completely
-Mix cooled butter with powdered sugar and vanilla and 1 tbsp milk.
-Add additional Tbsp (1 at a time) of milk until desired consistency. 

Trust me, these are SO easy and delish... the perfect fall treat for any get together. I am going to whip up another batch tomorrow to take to my physical therapy team. They have been so great.

  3. Hey Jenna! Instead of using the yellow cake mix, I use a spice cake mix with the pumpkin puree and it gives the muffins a really nice flavor :)
